MINI SALTED CARAMEL CHEESECAKES

Image
MINI SALTED CARAMEL CHEESECAKES Mini Salted Caramel Cheesecakes – creamy bite-sized cheesecakes with a graham cracker crust and topped with a delicious salted caramel. S My obsession for mini cheesecakes continues with these adorable salted caramel cheesecakes. A few weeks ago while I was shopping in Canmore I found this jar of salted caramel sauce in one my favorite little stores there. I knew then that I had to make something special to use it on. While I’m all about making things from scratch, I won’t go as far as making my own salted caramel, at least not yet. Why waste time when I can find it in stores and it’s really good. Probably better than I would make it, since I’d never made it before. I know, shocker. Let’s be serious here, I’d rather spend the time eating these cheesecakes. You probably all know by now that cheesecake is my favorite dessert, any kind of cheesecake. This is why I when I saw this salted caramel, I just knew mini cheesecakes was the way to go. The bottom cru...

PECAN PIE CAKE

Image
PECAN PIE CAKE THIS PECAN PIE CAKE IS PERFECT FOR YOUR HOLIDAY GET-TOGETHERS! BROWN SUGAR CAKE LAYERS AND BUTTERCREAM FILLED WITH TRADITIONAL PECAN PIE FILLING. Thirty dollars. That’s how much I spent on pecans for this cake. I kid you not. Thirty dollars!! Is that crazy to anyone else? Ridiculous. The pecans were on sale, too. Good grief. I didn’t use all of them (most, though), but I always get more than I need just in case. In hindsight, I probably could have gotten a giant bag of them in Costco for less. I’m not complaining about it (only kinda), but more so this is a PSA for those people who don’t bake. Next time you ask your baker buddy to make a cake for you, be aware that the ingredients do not come cheap, never mind the time it takes to make the cakes too. And if they are making it for you for free, that is agood friend. You should cherish them and shower them with adoration and gift cards to their favourite baking store. In my ongoing quest to stay away from pumpkin recipes t...

And believe it or not, they really do taste just like a Twix candy bar! I made these for my Christmas cookie trays this year and they are almost always the first ones to disappear when I set them out! I guess people just love the flavor of Twix. :) Plus how fun is it to have a cookie version of a classic candy bar? I might try this with all my favorite candy bars! These twix cookies have a shortbread cookie, caramel filling, and chocolate topping - just like a twix candy bar! Ingredients: C...

Pound Cake with Sweetened Condensed Milk

Image
Pound Cake with Sweetened Condensed Milk Pound Cake with Sweetened Condensed Milk is a rich and delicious dessert with old fashioned sweet vanilla taste. We love sweetened condensed milk around here. It’s such a great addition to many desserts. I usually buy about ten cans around the holidays and make fudge for friends and family.  But, there are so many other delicious recipes that contain sweetened condensed milk. It makes this poundcake so much richer.  We almost fight over who gets to lick the can. The kids will circle around me waiting until I first get the lid off of the can, and then try and get the remaining drops inside. And, they have me to contend with. I want it all!  But, we do share with each other when it comes down to who gets the last lick–most of the time!  Ingredients 1-1/3 cups all-purpose flour 3/4 tsp. baking powder 1/2 tsp. salt 2 sticks butter (1 cup) 3 eggs 1/2 cup sugar 2 tsp. vanilla 1 - 14 oz. can sweetened condensed milk Instructions Preh...

Fudge Brownies with Chocolate Frosting

Image
Fudge Brownies with Chocolate Frosting Super moist, super fudgy and slathered with a thick layer of cream cheese chocolate frosting – these brownies will be your new favorite.  I have a love affair with brownies. Fudgy, dense, chocolate-y. I’d opt for Birthday Brownies instead of Birthday Cake any day. Now – I love my Triple Chocolate Brownies but recently I’ve been on a quest to create the ultimate fudge brownies with chocolate frosting. Brownies that are chewy, fudgy, super moist AND can smothered in a thick layer creamy chocolate frosting without being too sweet. You see, my Triple Chocolate Brownies are the type for eating with a spoonful of ice cream and chocolate sauce. But sometimes you need that classic frosted brownie like the ones you buy in a giant slab from the corner bakery. And today – I have the perfect recipe. They’re dense, fudgy and have a delicious chocolate flavor without being too rich or bitter. Then to top it all off, they’re frosted with cream cheese chocola...

Healthy Chocolate Peanut Butter Balls

Image
Healthy Chocolate Peanut Butter Balls Enjoy a sweet treat with these healthy chocolate peanut butter balls that only use a few choice ingredients. It's gluten free, dairy free and vegan. I've never been much of a baker - too many precise measurements, where I prefer to toss, taste and experiment. I also just don't want cakes and eclairs in my house. It's too tempting and I prefer to get my calories elsewhere. That said, I do enjoy a little something sweet after dinner. It's the flare I like to send to the rest of my body that I'm shutting down the eating machine for the night.  I've had large amounts of nut butters in my house of late, like almond butter and peanut butter, and I've become a bit addicted. I could have worse addictions I suppose, but I'm just happy to control the ingredients going into my food and nut butters is an easy one to manage. Pair that with my love of a little something sweet, and just like the Reese's peanut butter genius...

MINI BAILEYS CHOCOLATE CHEESECAKES

Image
These Mini Baileys Chocolate Cheesecakes are easy to make and the small mini size makes them great for sharing and the perfect size. With the irish cream liqueur they are also a great treat. I loved the ease of making these as mini cheesecakes. They bake right in a cupcake pan so there’s no need for a pesky water bath. Like with making a regular cheesecake, the crust comes first. Just divide the mixture of oreo crumbs and butter between the cupcake liners and press them into the bottom. The crusts are baked for about 5 minutes. MINI BAILEYS CHOCOLATE CHEESECAKES RECIPE INGREDIENTS CRUST 1 cup oreo crumbs 2 tbsp butter, melted FILLING 12 ounces (339g) cream cheese, room temperature 1/2 cup (104g) sugar 6 tbsp (42g) cocoa 1/2 cup (120ml) sour cream 1/2 tsp vanilla extract 1/4 cup (60ml) Irish Cream Liqueur 2 eggs WHIPPED CREAM AND TOPPING 3/4 cup (180ml) heavy whipping cream 6 tbsp (43g) powdered sugar 2 tbsp (30ml) Irish Cream Liqueur Chocolate sauce INSTRUCTIONS CRUST Preheat oven to 3...
