NO BAKE AVALANCHE COOKIES

Image
NO BAKE AVALANCHE COOKIES Today we’re talking all out sweet stuff. Like so deliciously sweet that you cantstopwontstop, but your teeth are starting to hurt and your belly has been aching for the past 5 bites, but don’t you even think of quitting. Because I DON’T QUIT. Ingredients 2 cups Crispy Rice cereal 1 cup mini marshmallows 1/2 cup creamy peanut butter 1 lb white chocolate *optional – 1/4 cup mini chocolate chips to sprinkle on top Instructions Line 2 baking sheets with parchment paper, set aside. Mix cereal and marshmallows in a large bowl. Set aside. Melt white chocolate and peanut butter together in a double boiler. I prefer using a double boiler for melting white chocolate so it will melt slow and smooth, but if you prefer the microwave, you can do it that way too. Once the white chocolate is melted pour it over the cereal mixture and stir until completely coated. Drop using a tablespoon onto the lined pans. Sprinkle with mini chocolate chips, if desired. Place in refrigerator...

TWIX COOKIES

Image
If your favorite candy bar is a Twix then you are going to love these shortbread TWIX Cookies! I pretty much love any candy bar that has caramel in it.  I would have to say that my all time favorite is a Milky Way but a Twix candy bar runs a close second.  So if you like caramel too, you are going to love these cookies. The cookies start off with a buttery, flaky shortbread base then topped with caramel and finished with chocolate. I need to warn you that they are a very rich cookie so make sure you have some nice, cold milk on hand! Perfection! INGREDIENTS 1½ cups softened butter 1 cup powdered sugar 3 cups flour 1 teaspoon vanilla ¼ teaspoon salt 15 oz caramel **See notes 2 cups milk choc chips 2 tsp shortening INSTRUCTIONS Preheat oven to 350 degrees Cream butter and sugar together. Add your vanilla, flour and salt. Mix well. On a lightly floured surface, roll dough out to ½ inch thick. To cut cookies you can use a biscuit cutter or I just used a small glass that was 2 inch...

SOFT AND CHEWY TRIPLE CHOCOLATE FUDGE COOKIES

Image
A chocolate lover’s dream come true, these chocolate fudge cookies are soft, slightly chewy and packed with over a pound of chocolate! That’s over 1 ounce of chocolate in each cookie! I love anything chocolate. The more the merrier. And not just quantity speaking, but richness also! You know what I’m talking about, those chocolate treats that you need a glass of milk near by. That’s the case for these chocolate fudge cookies. At first I wanted to name them chocolate brownie cookies, but they are so rich and decadent, way, way better than the brownie cookies I’ve previously made.  Those are still good, but these will make you weak at the knees. These triple chocolate fudge cookies are fudgy, rich, intense, and decadent. The edges are chewy, the center is gooey and every bite is oozing with melted chocolate! A chocolate lover's dream come true, these chocolate fudge cookies are soft, slightly chewy and packed with over a pound of chocolate! That's over 1 ounce of chocolate in eac...

3-INGREDIENT BUTTERY SHORTBREAD COOKIES

Really awesome shortbread is made with just 3 simple ingredients.These buttery shortbread cookies are brimming with delicious melt-in-your-mouth flavors.Dress them up with sprinkles, drizzles, or keep them pure and simple.  Absolutely addictive. Ready or not, Christmas is a quick countdown away.  Just to make sure I don’t forget it, the kids are all home for two whole weeks. We’re neck deep in cookies all over our kitchen and will hopefully continue the trend in the next couple of days.  When there are Littles at home and they have friends, sometimes they all come swarming…and cookies disappear in nanoseconds. We had such fun over the weekend celebrating the holidays early with some family and friends.  I can’t count how many kiddos were there. At least fifteen of them, and half of them unapologetically hungry teens. INGREDIENTS 2 cups salted butter, cold and cut into pieces 1 cup packed light brown sugar 4½ cups all purpose flour, divided Optional: Your favorite spr...

LEMONHEAD COOKIES

Lemonhead Cookies are my new favorite cookie! Even if you’re not a fan of Lemonhead candy, you will fall in love with the lemon flavor of these cookies. The glaze makes them extra special, and the bottoms get slightly caramelized from the crushed candies making them perfectly chewy, yet still soft. Seriously delicious! Oh hello boys and girls! I am pah-rity dang excited about today’s cookie situation. Like for real for real. NO, no one ACTUALLY likes Lemonheads. I get it. But don’t let their small interference in today’s recipe to distract you from the finished product. The Lemonheads in this recipe are important. Let me explain. Ingredients 1 cup butter, room temperature 2 cups granulated sugar 2 tablespoons lemon zest 2 eggs 1 tablespoon vanilla extract 1/2 teaspoon kosher salt 1/2 teaspoon baking powder 1/2 teaspoon baking soda 3 1/2  cups all purpose flour 1 cup finely crushed Lemonhead candies Glaze 1 cup powdered sugar 2 tablespoons water or milk Instructions Preheat oven to ...

Vanilla Cutout Cookies that Don't Spread

Image
Learn the secrets to baking cutout cookies with neat edges, that won’t spread as they bake! You’ll fall in love with baking and decorating cutout cookies. INGREDIENTS 2 sticks (1 cup) cold, unsalted butter, cubed 1 cup granulated sugar 2 eggs 4 cups all-purpose flour 3/4 cup cornstarch 3/4 teaspoon kosher salt 1 teaspoon vanilla extract 1 teaspoon vanilla bean paste (optional) INSTRUCTIONS Preheat the oven to 375 degrees, and line baking sheets with parchment. Cream the butter and sugar, just until smooth and combined. Mix in the eggs until incorporated. Add the flour**, cornstarch, and salt, and mix on medium low speed.  The mixture will seem very dry and sandy at first, but after 3 to 5 minutes in the mixer it will gather itself into a ball and pull away cleanly from the sides of the bowl. Stir in the vanilla. (If you do not have an electric stand mixer with a paddle attachment, you may have to knead the dough by hand to fully bring it together.) Roll the dough out between 2 shee...

COOKIE HUMMUS DIP {21 DAY FIX}

Image
Cookie hummus dip is a healthy, 21 Day Fix approved treat that is so delicious, you may even fool people who aren’t on the Fix eating plan!  Confession # 39 – I’ve been dipping into this cookie hummus dip all day. Can you blame me? And while it’s definitely a “treat” on the fix, this cookie hummus is just so darn healthy, I might even have some more. Yup.  You heard me.  It’s healthy.  Extremely, actually, for a treat. It’s made from… wait for it… CHICK PEAS! I made a version of this a couple years ago from a recipe on Pinterest, and I’ve been wanting to make it even healthier AND Fix approved. Mission accomplished. But – the most important part – it’s also delicious.  You might even be able to serve this at a party and trick someone. Ingredients 1 cup of chick peas, rinsed and drained 1/3 cup of nut butter 2 -3 tablespoons of almond or coconut milk 1 teaspoon of vanilla Fix-approved sweetener of your choice- I used 1 T of pure maple syrup and 10 drops of liquid...
