CHEESY CAULIFLOWER BREADSTICKS – KETO AND GLUTEN FREE Using the same idea as pizza crust, it’s easy to make a low carb cheesy cauliflower breadsticks recipe instead. Simply leave out the pizza sauce! AUTHENTIC IRISH APPLE CAKE This is an authentic old fashioned Irish apple cake, the kind that would be made throughout the apple harvest season all over Ireland, where every farmhouse has its own prized version of the recipe. The heat wave in California did a number on my fall spirit, so I’m taking matters into my own hands and doing some serious baking with apples. It never fails to get me in the mood, and nothing beats a kitchen filled with the warm scent of apples and cinnamon. This particular apple cake recipe is mildly spiced with an inner core of thinly sliced tart apples, topped with an crumbly oat streusel. Tradition dictates serving it with some thick cream, or a luscious custard sauce. PECAN PIE CAKE THIS PECAN PIE CAKE IS PERFECT FOR YOUR HOLIDAY GET-TOGETHERS! BROWN SUGAR CAKE LAYERS AND BUTTERCREAM FILLED WITH TRADITIONAL PECAN PIE FILLING. Thirty dollars. That’s how much I spent on pecans for this cake. I kid you not. Thirty dollars!! Is that crazy to anyone else? Ridiculous. The pecans were on sale, too. Good grief. I didn’t use all of them (most, though), but I always get more than I need just in case. In hindsight, I probably could have gotten a giant bag of them in Costco for less. I’m not complaining about it (only kinda), but more so this is a PSA for those people who don’t bake. Next time you ask your baker buddy to make a cake for you, be aware that the ingredients do not come cheap, never mind the time it takes to make the cakes too. White Chicken Enchiladas White Chicken Enchiladas are ALL the rage, and for good reason. The flavor is incredible. Bold flavor but not spicy. Creamy comfort food, yet not too rich. These are a winner in all categories and will satisfy even the pickiest eater. These are not your typical enchiladas. Traditionally, enchiladas are made with corn tortillas and a red or green sauce. These are a “whole other thing”….and so so good. I have a big family and we love to have big Fiesta Night dinners. Tacos, taquitos, nachos, and of course these enchiladas are a must. There are never any leftovers. I like to put these on the Menu for Monday because I can cook the chicken in the slow cooker on Sunday and assemble everything and stick the pan in the fridge. If you love Twix candy bars then these cookies are for you! They are the perfect combination of shortbread, caramel, and chocolate. Just typing that out makes me want to make more of these – yum!! It goes without saying that they are delicious, but I also love how pretty they are – cute little round cookies with yummy layers of candy on top. And believe it or not, they really do taste just like a Twix candy bar! By: Andrea Correale Ingredients 1/4 cup ice 1/2 cup orange juice 1 1/2 ounces black vodka 1/2 ounce triple sec orange wedge, for garnish Instructions 1. Ingredients 1-1/2 TBSP butter 2 eggs, whisked 12 ounce bag frozen peas and carrots 2 tsp minced garlic (about 4 cloves) salt and pepper to taste 4 cups cooked rice, chilled 3 green onions, thinly sliced 1/3 cup soy sauce (more or less to taste) 1 TBSP oyster or fish sauce 1 tsp toasted sesame oil Instructions In a large skillet,melt 1/2 TBSP of the butter over medium-high heat. It’s such a great addition to many desserts. I usually buy about ten cans around the holidays and make fudge for friends and family.  But, there are so many other delicious recipes that contain sweetened condensed milk.
